Rice Paddle (Shamoji)

The rice paddle is used to scoop and mix rice. They are made out of bamboo and they must be lightly wetted before they are use, since it is easy for the rice to stick. Longer versions are available for bigger sushi buckets, how ever the tip is the same size since the rice should always be handled in small portions when preparing the sushi rice.
