Kitchen Towel (Fu-kin)
Several
kitchen towels are needed when
preparing sushi. One is to cover the sushi
bucket, one is to wipe the
sashimi
knife, and one is to wipe the cutting board. The kitchen
towels used
for
cleaning should be replaced frequently. Each time a fish or a sushi
roll is
cut, the knife should be wiped. The cutting board must be wiped each
time it is
used.
