The rainbow roll is a California roll with sashimi and avocado wrapped around it. The outside roll is first made, and then the ingredients are arranged diagonally in alternating colors. (Left photo: Sliced sashimi from left to right are hamachi, sea bass, salmon and tuna)

Ingredients:

Halibut Red Snapper, or Sea Bass
Tuna
Salmon
Yellowtail
Avocado
California Roll
Nori
Wasabi

Place the sashimi on the California roll at a slight angle. Leave some space open for
avocodo.

Peel an avocodo, then thinly peel the outer meat, which is greener than the rest of the fruit.
Fill in the gaps with the avocodo and cover the roll with plastic wrap. Rainbow Roll 7   Rainbow Roll 8
Cover with a sushi mat and grip tightly. Cut into 8 pieces.
