Yellowtail Amberjack Sushi

The yellowtail amberjack is one of the “Big Three Yellowtail” sushi fishes. The other two are the yellowtail, and the amberjack. All of them are related by species and considered a luxury fish. The yellowtali amberjack is a very fast swimmer, and therefore the muscles are developed and makes the flesh very firm. This is accompanied with a slight oily texture. Most of the flesh is light pink and is robust with flavors. It is very similar to the yellow tail, but far less in fat, and the taste of the fish itself can be enjoyed.
