Mantis shrimp is an original Edo style sushi ingredient. The mantis shrimp has to be
poached immediately after it is caught, since it starts to digest its own body
after it is fished out of the water.
The mantis shrimp is poached in hot water
blended with rice wine and salt for about 10 min. It is either served alone, or
with a tusme sauce made from its own
broth. Mantis shrimp is fine in texture and although does not have a sweet
