Rice Vinegar ( Yonezu, or Su in general)
Out
of all the varieties of vinegars, the rice
vinegar (yone su, yonezu) is used to make sushi rice,
because it
matches rice the
best. 100% pure rice vinegar that is properly fermented is recommended
when
making sushi. Many products are artificially produced with fermented
rice
flavorings. Some may contain MSG or monosodium glutamate for
flavorings.
Besides
the flavors, the acidic content of
the manufactured vinegar are lower, and do not contain macrobiotic
agents so it
may be unsanitary to use these to cure fish. It is important to read
the
ingredients and see if the rice vinegar has no ingredients other than
rice and
water.
