Several kitchen towels are needed when preparing sushi. One is to cover the sushi bucket, one is to wipe the sashimi knife, and one is to wipe the cutting board. The kitchen towels used for cleaning should be replaced frequently. Each time a fish or a sushi roll is cut, the knife should be wiped. The cutting board must be wiped each time it is used.
Once such towel is called the oshibori (hot towel in English). It is a wet hand towel offered to customers in places such as restaurants or bars, and used to clean one’s hands before eating. Oshibori has long been used in Japan. In “The Tale of Genji” era it was used for visitors, Edo period it was used in Hatago, later used in many restaurants, Oshibori has been Hospitality Culture in Japan. Recently it is seen worldwide. Cold oshibori are used in summer, and hot oshibori in winter.
