Mantis shrimp is an original Edo style sushi ingredient. It has to be poached immediately after it is caught, since it starts to digest its own body after it is fished out of the water.
The mantis shrimp is poached in hot water blended with rice wine and salt for about 10 min. It is either served alone, or with a tusme sauce made from its own broth. This shrimp is fine in texture and although does not have a sweet aroma, it has a deeper flavor than any other shrimp or crab.
