Geoduck is a clam that has a large valve that sticks out of its shell. The inner muscles of this valve is used for sushi. Geoduck is very crunchy, and has a strong ocean scent which is accentuated with a faint sweet taste. Geoduck is sliced thinly at an angle since it is very turgid. If the aromas are to be enjoyed, salt and citrus is recommended. For those who are not too fond of strong ocean aromas, soy sauce can slightly mask it.
For sushi, the valve is used mainly. The valve is first washed, and the tip is cut off. Then the outer flesh is skinned, and the valve is cut along its length and rolled out so it becomes flat.
